Ingredients:
- 2 cups mixed nuts almonds, cashews, walnuts, pecans
- 1 cup unsweetened shredded coconut
- 1/4 cup chia seeds
- 1/4 cup hemp seeds
- 1/4 cup maple syrup
- 2 tablespoons coconut oil, melted
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon sea salt
- 1/2 cup dried fruit cranberries, raisins, chopped apricots
Instructions:
Warm your oven up to 300F 150C and put parchment paper on a baking sheet
Put the nuts, shredded coconut, chia seeds, and hemp seeds in a large bowl and mix them together
Add the melted coconut oil, vanilla extract, cinnamon, and sea salt to a different small bowl, and mix them together using a whisk
Add the wet ingredients to the nuts and mix them around until everything is well covered
Make an even layer of the mixture on the baking sheet that has been prepared
Stir the granola every 15 minutes or so while it's baking for 25 to 30 minutes, or until it's golden brown and smells good
Let it cool all the way down on the baking sheet after taking it out of the oven
Add the dried fruit after it has cooled down
Put the granola in a container that won't let air in
You can keep it at room temperature for up to two weeks
