Pork Carnitas Burrito Bowls



These Pork Carnitas Burrito Bowls are bursting with flavor and are incredibly easy to make in a slow cooker. Tender, juicy pork carnitas are paired with rice, beans, and all your favorite toppings to create a delicious and satisfying meal.

Ingredients:

  • 3 lbs pork shoulder, trimmed and cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup chicken broth
  • Juice of 2 limes
  • 1/4 cup chopped cilantro
  • Cooked rice, for serving
  • Black beans, drained and rinsed, for serving
  • Chopped lettuce, for serving
  • Diced tomatoes, for serving
  • Sliced avocado, for serving
  • Sour cream, for serving

Instructions:

In a slow cooker, combine pork shoulder, onion, garlic, jalapeno, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper

Pour chicken broth and lime juice over the pork mixture

Cover and cook on low for 8 hours or on high for 4 hours, until pork is tender and easily shreddable

Once cooked, shred the pork using two forks and mix it with the cooking juices in the slow cooker

Stir in chopped cilantro

To assemble the burrito bowls, place cooked rice in bowls, top with black beans, shredded pork carnitas, lettuce, tomatoes, avocado, and sour cream

Serve hot and enjoy!

Broccoli Fish in Sweet Spicy Sauce



Broccoli Fish in Sweet Spicy Sauce is a delicious dish made with soft white fish and crunchy broccoli florets covered in a sauce that is just the right amount of sweet and spicy. It's a satisfying and healthy meal because the textures and tastes go well together.

Ingredients:

  • 400g white fish fillets
  • 2 cups broccoli florets
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 red chili, thinly sliced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • Salt and pepper to taste
  • Cooking oil

Instructions:

Take the fish fillets and break them up into small pieces

Add salt and pepper to taste

To make the sauce, put soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and thinly sliced chili in a small bowl and mix them together

Mix water and cornstarch in a different bowl to make a slurry

In a pan, heat the oil over medium heat

Put in the fish pieces and cook them all the way through until they are golden brown

Take it out and set it aside

If you need to, add a little more oil to the same pan and stir-fry the broccoli florets until they are soft but still crisp

Put the broccoli back in the pan with the cooked fish

Add the sauce to the pan with the fish and broccoli

Add the cornstarch slurry to the pan and stir it all the time until the sauce gets thick and covers the fish and broccoli evenly

Serve hot with noodles or steamed rice
