Ingredients:
- 4 salmon fillets
- 8 small flour tortillas
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup shredded green cabbage
- 1 cup shredded red cabbage
- 2 apples, julienned
- 1/2 cup sliced almonds
- 1/4 cup chopped fresh cilantro
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Juice of 1 lime
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/4 teaspoon garlic powder
Instructions:
Preheat oven to 400F 200C
Place salmon fillets on a baking sheet, drizzle with olive oil, and season with salt and pepper
Bake for 12-15 minutes until salmon is cooked through and flakes easily with a fork
While the salmon is cooking, prepare the slaw
In a large bowl, combine shredded green cabbage, shredded red cabbage, julienned apples, sliced almonds, and chopped cilantro
In a small bowl, whisk together mayonnaise, apple cider vinegar, honey, lime juice, ground cumin, chili powder, and garlic powder to make the dressing
Pour the dressing over the slaw mixture and toss until well coated
Warm the flour tortillas in a skillet or microwave
To assemble the tacos, flake the cooked salmon and divide it among the warm tortillas
Top each taco with a generous portion of apple almond slaw
