Cinnamon Roll Pound Cake Parfait



In this parfait, you can enjoy the delicious flavors of a classic cinnamon roll along with the richness of pound cake. When you mix layers of moist pound cake cubes with vanilla yogurt or whipped cream, you get a delicious treat.

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons cinnamon
  • 1/4 cup brown sugar
  • 1/2 cup chopped pecans or walnuts optional
  • 1 cup whipped cream or vanilla yogurt
  • Cinnamon sticks for garnish

Instructions:

Set the oven to 350F 175C and heat it up

Butter and flour a pan that holds a pound cake

Mix the butter and sugar in a big bowl until the mixture is light and fluffy

Adding the eggs one at a time and mixing them in is the next step

Mix the flour, baking powder, baking soda, and salt in a different bowl using a whisk

Slowly add the dry ingredients to the wet ones, mixing in the sour cream every so often

Don't mix any further than that

Put nuts, cinnamon, and brown sugar in a small bowl and mix them together

Set the pan aside and pour half of the batter into it

Then, sprinkle half of the cinnamon-sugar mixture on top of it

Do it again with the rest of the batter and the cinnamon-sugar mix

Use a knife to swirl the batter to make it look like marble

Put it in the oven and bake for 45 to 50 minutes, or until a toothpick stuck in the middle comes out clean

Before cutting the cake into cubes, let it cool all the way down

Put cinnamon roll pound cake cubes in serving glasses and top with whipped cream or vanilla yogurt

Do this again and again until the glass is full

Add some whipped cream on top and a cinnamon stick for decoration

Enjoy! Serve cold

Pork Carnitas Burrito Bowls

Ingredients:

  • 3 lbs pork shoulder, trimmed and cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 jalapeno, seeded and diced
  • 1 tablespoon chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 cup chicken broth
  • Juice of 2 limes
  • 1/4 cup chopped cilantro
  • Cooked rice, for serving
  • Black beans, drained and rinsed, for serving
  • Chopped lettuce, for serving
  • Diced tomatoes, for serving
  • Sliced avocado, for serving
  • Sour cream, for serving

Instructions:

In a slow cooker, combine pork shoulder, onion, garlic, jalapeno, chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne pepper

Pour chicken broth and lime juice over the pork mixture

Cover and cook on low for 8 hours or on high for 4 hours, until pork is tender and easily shreddable

Once cooked, shred the pork using two forks and mix it with the cooking juices in the slow cooker

Stir in chopped cilantro

To assemble the burrito bowls, place cooked rice in bowls, top with black beans, shredded pork carnitas, lettuce, tomatoes, avocado, and sour cream

Serve hot and enjoy!

Ginger Chocolate Chip Cookies



These Ginger Chocolate Chip Cookies are a delightful blend of warm spices and sweet chocolate. The addition of molasses adds a rich depth of flavor that complements the ginger perfectly. They are chewy, soft, and utterly irresistible!

Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1/4 cup molasses
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1 and 1/2 cups chocolate chips

Instructions:

Preheat your oven to 350F 175C and line baking sheets with parchment paper

Beat in the eggs one at a time, then stir in the molasses

In a separate bowl, whisk together the flour, baking soda, salt, ground ginger, ground cinnamon, and ground cloves

A hearty and nutritious gluten-free stew made with quinoa and a variety of colorful vegetables, cooked to perfection in the Instant Pot.

Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups gluten-free vegetable broth
  • 1 can 15 oz diced tomatoes
  • 1 cup carrots, chopped
  • 1 cup bell peppers, diced
  • 1 cup zucchini, sliced
  • 1 cup green beans, chopped
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

Press 'Saute' on the Instant Pot and heat olive oil

Add chopped onions and minced garlic, saut until fragrant

Add carrots, bell peppers, zucchini, and green beans

Cook for 3-4 minutes

Stir in quinoa, vegetable broth, diced tomatoes, thyme, cumin, salt, and pepper

Secure the lid, set the Instant Pot to 'Manual' for 8 minutes at high pressure

After cooking, allow natural pressure release for 5 minutes, then quick release remaining pressure

Owl Cake Pops



Delightful and adorable owl cake pops that are perfect for parties or as a sweet treat. These whimsical treats are sure to be a hoot at any gathering!

Ingredients:

  • 1 box chocolate cake mix
  • 1/2 cup vegetable oil
  • 3 large eggs
  • 1 cup water
  • 1 cup chocolate frosting
  • 1 package chocolate candy melts
  • 1 package white candy melts
  • Candy eyes
  • Colorful candy-coated sunflower seeds
  • Lollipop sticks

Instructions:

Bake the chocolate cake as directed on the package

After letting the cake cool fully, crumble it into a sizable bowl

Add chocolate frosting and stir until fully incorporated

Form the mixture into tiny owl-shaped balls and arrange them on a tray covered with parchment paper

As directed on the package, melt the chocolate candy melts in a microwave-safe bowl

After dipping the lollipops into the melted chocolate, place them inside the cake pops

Coat every cake pop completely by dipping it into the melted chocolate

After letting any extra chocolate fall off, put them back on the tray

Twinkie Cupcakes with Marshmallow Filling and Buttercream

Ingredients:

  • 1 box of yellow cake mix
  • 1 cup of water
  • 1/2 cup of vegetable oil
  • 3 large eggs
  • 1/2 cup of marshmallow fluff
  • 1/2 cup of unsalted butter
  • 2 cups of powdered sugar
  • 1 teaspoon of vanilla extract
  • 1/4 cup of heavy cream
  • 1/4 teaspoon of salt

Instructions:

Preheat your oven to 350F 175C and line a cupcake tin with paper liners

In a mixing bowl, combine the yellow cake mix, water, vegetable oil, and eggs

Mix until well combined

Fill each cupcake liner about two-thirds full with the cake batter

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Allow the cupcakes to cool completely on a wire rack

To make the marshmallow filling, beat the marshmallow fluff and unsalted butter together until smooth

Cut a small hole in the center of each cupcake and fill it with the marshmallow filling

To make the buttercream frosting, beat together the powdered sugar, vanilla extract, heavy cream, and salt until creamy and smooth

Pipe the buttercream frosting on top of each cupcake using a pastry bag or a zip-top bag with a corner snipped off

Iridescent Macarons



These iridescent macarons are a perfect addition to a pastel-themed girl's birthday party or wedding celebration. Their shimmering appearance and delicate flavors will surely impress your guests.

Ingredients:

  • 2 cups almond flour
  • 2 cups powdered sugar
  • 4 large egg whites, room temperature
  • 1 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • Gel food coloring pastel colors
  • 1 teaspoon vanilla extract
  • Edible iridescent glitter for decoration

Instructions:

Adjust the oven temperature to 300F 150C and place parchment paper on two baking sheets

Pulverize the powdered sugar and almond flour in a food processor

Pulse until thoroughly combined, then sift to get rid of any lumps into a sizable mixing bowl

Whisk the egg whites in a different mixing bowl until frothy

After adding the cream of tartar, beat the mixture until soft peaks form

While beating the egg whites until stiff peaks form and the mixture is glossy, gradually add the granulated sugar

Add vanilla extract and stir

Till everything is well combined, gently fold the almond flour mixture into the egg white mixture

It's important to avoid overmixing; the batter should be thick and smooth

Pour the batter into individual bowls and color each one with a different pastel gel food coloring

Stir until the colors you want are achieved

Fill a piping bag fitted with a round tip with each colored batter

Leaving space between each macaron, pipe tiny rounds onto the baking sheets that have been prepared

To remove air bubbles, tap the baking sheets against the counter

Allow the macarons to sit at room temperature for approximately half an hour in order to form a skin

Bake for 15 to 18 minutes, or until the macarons are set and have risen, in a preheated oven

Take out and allow to cool on the baking sheets

Gently remove the macarons from the parchment paper once they have cooled

Sort them into pairs based on size, then stuff each pair with your preferred filling ganache or buttercream, for example

For a whimsical finishing touch, dust the filled macarons with iridescent edible glitter
